Mickey Mouse Gingerbread Cookies – Disneyland Copycat Recipe

If you’ve ever been to Disneyland or DisneyWorld at Christmastime, you know the magic that is everywhere! They have these awesome Mickey Mouse Gingerbread Cookies that smell amazing and look super cute too!

Mickey Mouse Gingerbread Men Cookies

Anytime we can do a Disney themed recipe, it’s always a major hit. These would be perfect for a cookie exchange or Christmas party you may be going to.

After you’ve made your gingerbread Mickey’s, you can decorate them how you like or follow our instructions to get the ones pictured.


-⅔ cups softened unsalted butter 

-¾ cup brown sugar 

-⅔ cup unsulphured molasses

-1 large egg at room temperature 

-1 teaspoon pure vanilla extract 

-3 ½ cups all purpose flour 

-1 teaspoon baking soda 

-½ teaspoon salt 

-1 tablespoon ground ginger 

-1 tablespoon ground cinnamon 

-1 tablespoon ground allspice 

-1 tablespoon cloves 

-Red, white, brown, and green candy melts

  • In a large bowl, use a hand mixer or a stand mixer, beat the butter on medium speed until smooth and creamy (about 1 minute) 
  • Add brown sugar and molasses on medium speed until fully combined
  • Beat in eggs and vanilla on high speed for 2 minutes 
  • In a separate bowl, mix together the flour, baking soda, salt, ginger, cinnamon, allspice, and cloves 
  • On low speed mix the dry ingredients into the large bowl with butter mixture (will be thick and slightly sticky) 
  • Divide the dough in half and place in a large baggie or wrap in plastic wrap as tightly as possible
  • Pat dough down flat 
  • Chill the dough for at least 3 hours (chilling is mandatory) 
  • Preheat oven to 350 degree F and line 2-3 baking sheets with parchment paper or spray with non sticky cooking spray 
  • Remove the dough from the plastic and lay down on your work service with a generous amount of flour for your surface and rolling pin (makes rolling the dough out a lot easier) 
  • Roll out dough to about ¼ inch thick and cut your desired shapes
  • Place cookies 1 inch apart of the baking sheet 
  • Bake cookies for 8-10 minutes (smaller cookies=less time, larger cookies= more time)

Decorating Instructions:

  • Allow cookies to completely cool down before decorating 
  • Outline cookie with white candy melts and add a swiftly line to each arm and leg
  • Make 2 triangles facing inwards in red candy melt to outline the shape of the bow then fill in 
  • Using the green candy melts, make 2 buttons just below the red bow 
  • Use the brown candy melts to make the eyes in a vertical oval and the nose in a horizontal oval. Then make the smiley face topped with the red candy melts to make bushing cheeks 
  • Enjoy!
