Easy Homemade Ice Cream Sandwich

I love a good ice cream sandwich, actually, ice cream sandwiches were one of my favorite treats as a kid. It was like winning the dessert lottery and being able to have cookies AND ice cream at the same time. However, I assumed they were super complicated to make at home and stuck with just getting them from the store from time to time.

Today, I’m here to tell you making homemade ice cream sandwiches is INCREDIBLY easy and. The end result is also really tasty and the whole project is a delicious way to keep the whole family entertained. Some can help make the cookies while others can be in charge of the ice cream.

How to make Ice Cream Sandwiches at home

Here’s what you need to know. Making them at home is easy, however there are a couple steps you need to follow, which is what makes it a fun project.

  • Start by making the cookie. The cookies are soft and chocolate-y like a brownie but hold they shape pretty well and soak up all the melting ice cream. To make them just mix all the ingredients together until incorporated.

  • Then bake the cookies. I baked them in a rectangular pan but you can use whatever you have on hand and cut it to fit any shape you like. Heart shaped cookie sandwiches?

  • Then it’s time to make the ice cream. Beat heavy cream until fluffy. Pour a can of condensed milk and mix until just incorporated. Trust me when I say this is the creamiest, sweetest ice cream and you don’t even need an ice cream machine.

  • Fill your cookie sandwiches with your homemade ice cream and freeze for around 3 hours. Cut into the desired shape and enjoy!
