I love a good ice cream sandwich, actually, ice cream sandwiches were one of my favorite treats as a kid. It was like winning the dessert lottery and being able to have cookies AND ice cream at the same time. However, I assumed they were super complicated to make at home and stuck with just getting them from the store from time to time.
Today, I’m here to tell you making homemade ice cream sandwiches is INCREDIBLY easy and, the end result is also really tasty and the whole project is a delicious way to keep the whole family entertained. Some can help make the cookies while others can be in charge of the ice cream.

How to make Ice Cream Sandwiches at home
Here’s what you need to know. Making them at home is easy, however there are a couple steps you need to follow, which is what makes it a fun project.
- Start by making the cookie. The cookies are soft and chocolate-y like a brownie but hold they shape pretty well and soak up all the melting ice cream. To make them just mix all the ingredients together until incorporated.
- Then bake the cookies. I baked them in a rectangular pan but you can use whatever you have on hand and cut it to fit any shape you like. Heart shaped cookie sandwiches?
- Then it’s time to make the ice cream. Beat heavy cream until fluffy. Pour a can of condensed milk and mix until just incorporated. Trust me when I say this is the creamiest, sweetest ice cream and you don’t even need an ice cream machine.
- Fill your cookie sandwiches with your homemade ice cream and freeze for around 3 hours. Cut into the desired shape and enjoy!
Ice Cream Sandwiches
Ingredients:
For the ice cream:
- 2 Cups heavy cream
- 1 Can condensed milk
- 1 Tsp vanilla extract
For the cookies:
- 7 Tbsp butter
- ¾ Cup sugar
- 1 ¼ Cup flour
- ¼ Cup cocoa powder
- 1 Tsp baking powder
- 1 Tsp vanilla extract
- ⅔ Cup milk
Directions For the Ice Cream Sandwich Recipe:
Prepare the cookies:
-Preheat the oven to 350 degrees.
-Grease and flour a baking pan and set aside.
-Beat butter and sugar until creamy.
-In a separate bowl mix flour with cocoa powder and baking powder.
Add half the flour mix to the butter mix and beat until incorporated.
Add the milk and vanilla and mix for 2 more minutes or until incorporated.
Add the remaining flour mixture and incorporate until fluffy.
-Spread half the batter into the prepared cake pan and bake for 15 minutes.
-Let cool. then remove from the pan and repeat the process with the rest of the batter.
Let it cool completely.
Meanwhile prepare the ice cream.
-In the bowl of a stand mixer whip the heavy cream until light and fluffy.
Add the condensed milk and vanilla extract
And continue mixing until incorporated.
Spread the ice cream over one cookie layer and top with the other cookie.
Carefully wrap with plastic wrap and take to the freezer. Freeze for around 3 hours before slicing.
