Oh my, this cheesecake. This is the type of cheesecake you take to every party and gathering and potluck and celebration because it’s the type of cheesecake that’s so good you just need to share it with the world.
I mean, this is super creamy, super flavorful, studded with soft caramel apple pieces and topped with a delicious and indulgent caramel apple sauce that’s almost too good to be true.
It’s also super eways to make and honestly pretty much foolproof. I was even thinking about calling this the magical cheesecake, that’s how good it is.
How to make the caramel apple topping and filling
One of the things that make this caramel apple cheesecake so good (apart from the fact that’s so easy!) is the caramel apple topping. The apples get soft and buttery and then coated and simmered in caramel sauce and heavy cream.
However making the sauce is super easy! Melt some butter into a large pan, add a couple apples cut into small pieces and cook until soft. Then add a generous amount of caramel and a splash of heavy cream and bring to a gentle simmer. The caramel gets infused with the apple and the apple soaks all the caramel flavor. DELICIOUS!
I like to bake a large batch and keep it refrigerated. It’s not only a great cheesecake filling and topping but also delicious served over ice cream!

Making a creamy caramel apple cheesecake
I love love love how creamy this cheesecake is! It’s airy and light and almost melts in your mouth. There are a lot of different ways to make cheesecake and each one results in different textures (some prefer a dense cheesecake, others prefer light and airy).
If you want a dense cheesecake then you need to mix until your ingredients are barely incorporated. However if you want a super easy cheesecake like this one you need to beat our ingredients until fluffy.
I add almost all the ingredients to the bowl of a stand mixer and mix on medium speed for around 7 minutes, that way you incorporate a ton of air to your mix.
Caramel Apple Cheesecake
Ingredients:
For the filling/topping:
- 3 Tbsp butter
- 2 Apples, cored and diced
- ⅓ Cup caramel sauce
- 3 Tbsp heavy cream
For the crust:
- 1 Cup graham crackers, crumbled
- 5 Tbsp butter, melted
For the cheesecake:
- 1 Package cream cheese
- ⅓ Cup butter
- 1 Cup sugar
- ⅓ Cup sour cream
- 2 Eggs
- 1 Tsp vanilla extract
Directions:
-Preheat the oven to 300 degrees.
-Grease and flour a baking pan and set aside.
Prepare the caramel apples.
-Melt butter in a big pan over medium heat.
-Add apples and cook until soft, around 5 minutes.
-Add caramel sauce and heavy cream and cook for 5 more minutes or until the sauce is thick and the apples are soft.
-Remove from heat and set aside.
While the apples are cooking prepare the crust.
-In a bowl mix the graham crackers with the melted butter.
-Press firmly into the bottom of the prepared pan and take to the oven for 10 minutes.
Meanwhile prepare the filling:
-In a large bowl beat cream cheese, butter, sugar, sourcream and vanilla extract together until creamy.
-Add the eggs and beat for 7 minutes or until the mix is light and fluffy.
-Take the crust out of the oven. Pour the cheesecake mix on top.
-Pour ½ the apple caramel filling into the cheesecake and with the help of a spoon swirl it.
-Take to the oven and bake for 45 minutes or until done.
-Take it out of the oven and spread the remaining sauce over the cheesecake.
