When it comes to dessert recipes I always love the ones that are easy. I still want all the flavor and all the great texture and all the good things a traditional recipe has but with half the work. Is it possible? Well with these gluten free sugar cookies it certainly is!

You just need to beat together all the ingredients, spread in a baking pan and take to the oven until they are golden brown in the corners. Frost with some easy buttercream, go happy with the sprinkles (they also help cover any mistakes made when frosting!) and cut into thick bars. The only difficult thing? Trying to not eat the whole batch at once.

Gluten Free Sugar Cookies: Which flour to use?

Gluten free baking can be just as simple as traditional baking if you have a good cup for cup flour blend.

I like to make my own mixing rice flour, cornstarch, dry milk and xanthan gum. Those 4 things result in a flour blend that acts just like all purpose flour. Sometimes, if I’m short on time or just can’t bother with making my own blend I buy it at the supermarket. Most grocery stores carry great gluten free flour blends now!

Also as a quick note, make sure to check your sprinkles are certified gluten free. Sprinkles can sometimes contain gluten or be produced in facilities that handle gluten or other allergens.

How to store gluten free sugar cookies

Since these sugar cookies are frosted with a traditional buttercream I prefer to store them in an airtight container in the refrigerator. I just take it out a couple minutes before serving them so they are room temperature.

What I love the most about this recipe is how versatile it is! You can play with the frosting as much as you want to have different cookies every single time.

My favorite combo is keeping the vanilla sugar cookie base and frosting it with some chocolate buttercream. Follow the same buttercream directions and add ¼ Cup cacao powder and 3 Tbsp milk to the buttercream to have a fudge like frosting that’s to die for!

Ingredients:

For the gluten free flour blend:

  • 1 Cup rice flour
  • ½ Cup cornstarch
  • ¼ Cup dry milk
  • 2 Tsp xanthan gum

For the sugar cookies:

  • ½ Cup butter
  • ¼ Cup cream cheese
  • ½ Cup sugar
  • 1 Egg
  • 2 Cups gluten free flour blend
  • 1 Tsp baking powder

For the buttercream:

  • 6 Tbsp butter
  • 2 Cups powdered sugar
  • 1 Tbsp milk

Directions:

1. Prepare the flour blend: In a big bowl mix all the ingredients together. (rice flour, cornstarch, dry milk, xanthan gum) Store in an airtight container until ready to use.

2. Prepare the sugar cookies:

-Preheat the oven to 350 degrees.
-Grease and flour a baking pan and set aside.
-In a bowl beat butter and cream cheese until creamy.
-Add sugar and continue mixing until light and fluffy.
-Mix in the egg and incorporate the flour mixing until you have a thick dough.

-Spread the batter into the prepared pan, it should be sticky.
-Transfer to the oven and bake for 18 minutes or until golden brown in the edges.
-Remove from the oven and let it cool completely.

3. Prepare the buttercream:
-Beat butter, powdered sugar and milk until light and fluffy. Around 5 minutes.

-Spread the cookies with a thick frosting layer and top with sprinkles.
-Cut into bars and serve.
