Sure, brownies are a fantastic treat that makes for a happy dessert or snack. They’re easy for anyone to grab off a tray to help themselves at parties and gatherings too.

All you need are a few ingredients and a Mickey Mouse cookie cutter. What You Will Need for These Mickey Mouse Brownies

For the brownies:

  • 1 1/2 C unsalted butter (use the sweet cream style, softened)
  • 2 C sugar
  • 1 1⁄3 C brown sugar
  • 4 large eggs
  • 6 tbsp fresh-brewed and cooled coffee
  • 4 tsp pure vanilla extract
  • 1 1⁄2 C Hershey’s cocoa powder
  • 2 tsp instant espresso grounds
  • 1 1⁄2 C flour
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • 1 – 4-inch Mickey Mouse cookie cutter (a must if you want to have that iconic Mickey shape)

For the white chocolate frosting:

  • 1 C unsalted sweet cream butter, softened
  • 12 oz white chocolate, melted and cooled
  • 1 C powdered sugar
  • 1 tsp pure vanilla extract
  • 2 C sprinkles (choose your favorite colors for holidays, parties, and whatever you like!)
  • 1 disposable piping bag

Make Your Own Mickey Brownies

A great tip for making Mickey Mouse brownies is to first use cooking spray on your cookie sheet and then put parchment paper on top. This holds the paper in place, a handy trick!

In a large bowl, you’ll beat the butter, both brown and regular sugar, eggs, coffee, and vanilla until fluffy. Take a medium bowl and whisk the cocoa powder, espresso grounds, flour, cornstarch, and baking powder. Then gradually beat the dry stuff into the wet stuff.

You’ll spread this all on that baking sheet, bake, and let it cool completely.

And then the magic happens! You’ll use that Mickey Mouse cookie cutter to cut out 12 brownies and move them to a wire rack. Then, make the frosting using your stand mixer. You’ll want to gradually beat in the melted white chocolate here for the best results.

The piping bag will help you make a perfect outline on the edges of the brownies, then you can fill it in. Use an angled spatula to make it smooth and pretty. Top them with sprinkles and they’re ready to go!

Directions

  1. Preheat the oven to 350 degrees and spray a 12×19 cookie sheet with pam spray. Cover the pan with parchment paper. The baking spray helps keep the parchment paper in place.
  1. Using a large bowl, beat the butter, sugar, brown sugar, eggs, coffee, and vanilla until combined and fluffy.
  1. In a medium bowl, whisk the cocoa powder, espresso grounds, flour, cornstarch, and baking powder.
  1. Gradually beat the dry ingredients into the wet.
  1. Spread the brownie batter onto the cookie sheet.
  1. Bake in the oven for 22-26 minutes or until a toothpick in the center comes out clean.
  1. Allow cooling completely.
  1. Using the Mickey cookie cutter, cut out 12 brownie mickeys and place them onto a wire rack.
  1. Using a standing mixer, beat the butter and vanilla until light in color.
  1. Gradually beat in the melted white chocolate.
  1. Beat in the powdered sugar until combined.
  1. Scoop the frosting into the disposable piping bag and cut the tip-off.
  1. Pipe an outline around the edge of the brownies.
  1. Fill in the center with the frosting and smooth with an angled spatula.
  1. Sprinkle some valentine’s day sprinkles on top. Enjoy!
