First off, can you believe that this recipe is gluten-free? Never in my wildest dreams did I think I’d nail this Baked Cinnamon Apple Crisp that is without gluten and can easily be enjoyed so perfectly any time of the day! 

Have I mentioned that this apple crisp recipe is also a super simple way to use up those apples that you intended to eat when you were trying to be healthy but may have forgotten about in the process? What type of apples works best for this apple crisp? 

This is really up to you and your tastebuds but what I’ve found is that firm apples work the best. Pink lady apples give a sweet crunch while Granny Smith apples give it a little more tartness. (if you have other apples at home you can totally use them as well but if they’re not firm, their texture is going to be a lot mushier in this recipe!)

Will the topping on this apple crisp be soft or hard?

Since it’s baked, it’s going to be soft but don’t let that fool you. You can easily overcook this crisp recipe if you’re not careful. Make certain that you’re following the recipe closely or that soft apple crisp topping is going to become a hard and crunchy one fast. (but don’t worry – if that happens, just scoop on some cold ice cream and use that to soften it right up!)

Apple Crisp Recipe

Ingredients:

6 large apples, cored, peeled, and sliced
1 T. fresh lemon juice
1/3 c. real maple syrup
2 T. 100% apple juice (sugar free)
1 t. ground cinnamon
½ t. ground allspice
1½ t. fresh thyme leaves
¼ t. salt

Apple Crisp Recipe

Topping Ingredients:

1 c. old-fashioned rolled oats (Gluten Free Version)
1/3 c. almond flour
1/3 c. almonds, sliced
1/3 c. honey, preferably local
3 T. unsalted butter, melted

Directions:

Place top oven rack in the center position and pre-heat oven to 350°F. Grease an 8” x 8” baking dish and set aside.

Apple Crisp Recipe

Place apples in a large non-reactive bowl and toss with fresh lemon juice. Add maple syrup, apple juice, cinnamon, allspice, thyme leaves, and salt. Toss to combine and set aside.

Combine topping ingredients in a separate bowl and stir until oats are thoroughly coated and all ingredients are well combined. Set aside.

Pour apple mixture into prepared baking dish and spread into an even layer. Spread the topping evenly across the top in a uniform layer, as well.

Place into pre-heated oven and bake for 30 minutes. If the top layer is nicely browned, cover dish loosely with aluminum foil to prevent over-browning. Continue baking for another 15-20 minutes or until the apple crisp is nice and bubbling. Remove from oven and set aside to cool for 5-10 minutes.
