Ingredients:
Cupcake:
- 1 cup dried cherries
- 1 cup Dr Pepper softened
- 2 sticks salted butter, softened
- ¼ cup unsweetened cocoa powder
- ½ cup boiling water
- ½ cup buttermilk
- 3 large eggs
- 1 teaspoon baking soda
- 2 cups AP flour
- 1 ⅓ cups sugar
- 2 ½ teaspoons pumpkin pie spice
Frosting:
- 4 cups Dr Pepper
- 3 sticks salted butter
- 2 ½ cups powdered sugar
- 1 tablespoon orange zest
- 1 tablespoon lemon zest
- ½ teaspoon vanilla extract

Preparation Instructions:
- Preheat oven to 325 degrees
- Line muffin tins with muffin papers
- In a small pot stir together the cherries and the soda over medium high heat for about 5 minutes, set aside to cool

- In a small bowl whisk together melted butter, cocoa, and boiling water, set aside to cool

- In a separate larger bowl, whisk together buttermilk, eggs, baking soda, and vanilla

- Add in flour, sugar, and spice

- Fill the muffin tins and bake about 18 minutes or until toothpick comes out clean

- Let cool completely before frosting
Frosting Directions:
- Boil soda over medium high heat until reduced to about ½ cup, set aside to cool completely
- Using a mixer cream together butter, sugar, zests, and vanilla extract

- Drizzle in cooled soda and mix until smooth

- Frost cooled cupcakes with spatula or from a piping bag
