Classic Banana Nut Muffins

Banana Nut Muffins are a household favorite over here. And what better way to use your older bananas that no one wants to eat. These tasty muffins are exactly what you need when you want a nice addition to your breakfast or a sweet bread at dinner.

Who doesn’t love banana nut bread? But having muffins makes it super easy to take on the go and pack in lunches. Kids love getting these in their school lunches, and adults love taking them to work.

Have your favorite muffins all ready to go in less than 45 minutes!

Prep time: 10 minutes
Bake time: 20 minutes
Yields: 12 muffins 

Ingredients: 

Non-stick cooking spray 

3 extra ripe bananas, mashed 

¼ cup unsalted butter, melted

¼ cup milk

1 egg

1 teaspoon vanilla

½ cup brown sugar

½ cup sugar

2 cup all-purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 cup walnuts, chopped + extra to top muffins before baking, if desired

Directions:

1. Preheat oven to 350°F. Spray a standard muffin tin with non-stick cooking spray and set aside.

2. Add the mashed bananas, melted butter, and milk to a large mixing bowl. Mix to combine.

3. Beat in the egg and vanilla, and brown sugar.

4. Add in the remaining dry ingredients and fold in until just mixed. Then, fold in the walnuts.

5. Fill muffin pan cups to about 4/5 full. Top with additional walnuts, if desired.

6. Place in the pre-heated oven and bake for 18-20 minutes, or until toothpick inserted in the center of a muffin comes out clean.

7. Remove from oven and cool for at least 5-10 minutes before serving. Enjoy!
