This red velvet chocolate chip cookie cake is chewy, soft and crunchy all at the same time, just like a good cookie should be. Studded with white chocolate chunks and decorated with a sweet and tangy cream cheese frosting, this is the cookie cake you’ll want to make for every occasion.

When it comes to cookie flavors I have a clear favorite: red velvet! There’s something about red velvet that hits the spot every time. I mean, it’s part vanilla, part chocolate. The best of both worlds right there in your cookie.

However making a delicious red velvet cookie is not easy, you want the ratio of chocolate to vanilla tobe spot on, and the chocolate chips on top to be shiny and melt in your mouth. I was determined to get the best possible cookie cake ever and after a lot of (tasty) trials I can finally share it with you!

What you need to make a delicious red velvet cookie cake:

The great thing about this recipe is you only need pantry ingredients! It’s also fairly easy to make so it’s a great project to do with kids too. Here are the basics you are going to need:

  • Butter
  • Brown sugar
  • Sugar
  • Vanilla extract
  • Eggs
  • A splash of milk
  • Red food coloring
  • Cocoa powder
  • Flour
  • Chopped white chocolate, I mean, this is technically optional since you can have a cookie without chips but it makes this 10 times better!

Tips to make the best red velvet chocolate chip cookie

This cookie cake is easy. Mix all the ingredients together, bake and decorate. I love it because it’s so easy it’s almost foolproof.

And I say almost because there are a couple tips you can follow if you want to bake the best cookie cake you’ll ever had

  1. Use room temperature ingredients: Room temp ingredients incorporate better, they also emulsify which is just the fancy way of saying they incorporate more air to your dough. More air means a softer cookie.

  2. Add only a drop of food coloring: A little goes a long way with red food coloring so you don’t want to over do it and end up with your bowls and spatula stained forever.

  3. Add the chocolate chunks after baking: I know this may sound insane but white chocolate burns FAST. So if you don’t want to end with charred chunks of chocolate add them to the top immediately after taking your cookie cake from the oven. The chocolate will melt instantly just like if you would have added it from the beginning.

Red Velvet Chocolate Chip Cookie Cake

Ingredients:

  • 1 Cup butter
  • 1 ½ Cup brown sugar
  • ½ Cup sugar
  • 2 Eggs
  • ½ Tbsp vanilla extract
  • 3 Tbsp milk
  • 1 Drop red food coloring
  • 3 Cups flour
  • ½ Cup cocoa powder
  • 1 Cup white chocolate, chopped

For the frosting:

  • ½ Cup butter
  • ¾ Cup cream cheese
  • 4 Cups confectioners sugar
  • 3 Tsp vanilla extract
  • ½ Tsp lemon juice
  • Sprinkles

Directions:

-Preheat the oven to 350 degrees.

-In a bowl beat butter, brown sugar and sugar until light and fluffy.

-Add the eggs, milk and red food coloring and beat until incorporated.

-Mix in the flour and cocoa powder. Cover and refrigerate for 30 minutes.

-Grease a cake pan and transfer the chilled cookie dough to it.

Press firmly and take to the oven. Bake for 18 minutes or until done.

-In a bowl beat butter and cream cheese until creamy.

-Add the vanilla extract, lemon juice and confectioners sugar and mix on high speed until fluffy, around 6 minutes.

-Transfer to a piping bag.
