Need sweet and girlie Pink Grapefruit Cupcakes for a baby or bridal shower? Instead of going to the bakery and paying a fortune, whip some up on your own.

These grapefruit cupcakes are made with pink grapefruit soda to give it a fun citrusy twist.

This recipe lets you LOOK like you went completely over the top and beyond with little effort on your end. With the grapefruit cupcake, everyone will ask which bakery you got them from. But you can smile and tell them you didn’t take that shortcut…that you made these pink grapefruit soda cupcakes from scratch.

Elegant and stunning, no one will ever guess these started life from a box of cake mix. They’re the perfect dessert for any girly occasion!

What You Will Need for These Pink Grapefruit Soda Cupcakes

  • White cake mix – It all starts here, plus you’ll need vegetable oil and egg whites.
  • Organic Pink Grapefruit Italian Soda – You can find this at Whole Foods or Amazon.
  • White baking chocolate – Chop this up.
  • Pink cupcake liners – These are easy to find at Walmart or on Amazon.
  • Pink food coloring – Keeping up with that pretty in pink theme.
  • Buttercream frosting – You’ll be making this with salted butter, powdered sugar, half and half (or whole milk), more of that grapefruit soda, and the pink food coloring (if you want it to be pink).
  • Large piping bag – Make sure it has 1 large, round frosting tip.
  • Optional add-ons – You can also grab paper straws and tropical grapefruit-shaped sprinkles which we found at Joann to add an extra touch if you’d like. 

Make Your Own Grapefruit Cupcake with Buttercream Frosting

These grapefruit cupcakes couldn’t be any easier!

You’ll get your oven preheated to 350F and line your muffin tin with cupcake liners.

Then you’ll put the cake mix in a large mixing bowl with oil, egg whites, and soda, mixing on medium. When that’s done, you fold in the white chocolate.

Now you’ll add the batter into the muffin tin so they’re each 2/3 full, then bake for 18 to 20 minutes. Let them cool and get busy making the frosting.

Incidentally, that frosting is a snap. All you do is cream the butter, then add the soda and milk together. You’ll then slowly mix in the powdered sugar a little at a time while also slowly adding a little of the liquid mixture. When the frosting is creamy and forms stiff peaks, it’s ready.

You can then add the pink food coloring little by little until you achieve your favorite shade of pink.

Pop it in the piping bag and get busy frosting those cooled cupcakes.

Add the sprinkles and straws if you want your presentation to be extra.

Pink Grapefruit Soda Cupcakes Recipe Ingredients.

Cupcake Ingredients:

  • 1 white cake mix
  • 1/2 cup vegetable oil
  • 4 egg whites
  • 1 ¼-1 ¾ cups Organic Pink Grapefruit Italian Soda (Whole Foods or Amazon)
  • 1/3 cup white baking chocolate, chopped
  • Pink cupcake liners (Get them at Walmart or on Amazon)
  • Pink food coloring

Frosting Ingredients:

  • 2 sticks salted butter, softened
  • 4 cups powdered sugar
  • 1 tablespoon half and half or whole milk (not pictured)
  • 2 tablespoons Organic Pink Grapefruit Italian Soda (you can find it at Whole Foods or on Amazon)
  • Pink food coloring (optional)
  • 1 large piping bag, 1 large round frosting tip
  • Paper straws (optional)
  • Wilton Tropical Grapefruit Shaped Sprinkles (We found ours at Joann) optional)

Directions for Cupcakes:

  1. Preheat oven to 350 degrees. Spray or line a standard muffin tin.

2. Add cake mix to a large mixing bowl. Using a hand or stand mixer, add in your oil, egg whites, and soda, and mix on medium until well incorporated.

3. Fold in the chocolate.

4. Add batter into the muffin tin until each is about 2/3 full. Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.

Directions for Frosting:

5. In a large mixing bowl, using an electric hand or stand mixer, cream the butter, and cream cheese and beat until light and fluffy (about 2 minutes).

6. Mix the half and half or milk and pink grapefruit soda together. (If you don’t, the carbonation in the soda will break your frosting)

7. Slowly mix in the powdered sugar, 1 cup at a time, while adding a bit of the liquid mixture from Step 6 in between each cup.  Continue to mix for 1-2 minutes or until creamy and forms stiff peaks, but don’t overmix!

8. Add in food coloring if desired. Start with 1-2 drops and mix. Continue until color is achieved. Prepare piping bag and fill bag with frosting.

9. Frost your cupcakes. Add your Wilton grapefruit sprinkles if desired. Enjoy! Makes 24 cupcakes.
