What You Will Need for Brownie Cookie Dough Cake

For the chocolate chip fudge brownie layers:

  • 1 1⁄2 c canola oil
  • 3 C sugar
  • 1 tbsp pure vanilla extract
  • 6 large eggs
  • 1 1⁄2 C flour
  • 1 C Hershey cocoa powder
  • 3⁄4 tsp baking powder
  • 1⁄4 tsp kosher salt
  • 1 1⁄2 C semi-sweet chocolate chips
  • 1 10-inch cake board

For the chocolate chip Funfetti cookie dough frosting:

  • 3 C flour
  • 1 1⁄2 C sugar
  • 1 1⁄2 C unsalted sweet cream butter, softened
  • 1 tbsp pure vanilla extract
  • 3⁄4 tsp kosher salt
  • 1 C Funfetti sprinkles
  • 1 C semi-sweet chocolate chips
  • 6 tbsp whole milk
  • Small ice cream scooper

For the chocolate frosting:

  • 1 C unsalted sweet cream butter, softened
  • 2 1⁄2 C powdered sugar
  • 1⁄2 C Hershey cocoa powder
  • 4 tbsp heavy whipping cream
  • 1 large piping bag with a large star tip

For the chocolate ganache:

  • 1 C semi-sweet chocolate chips
  • 1⁄2 C heavy whipping cream
  • 1 squeeze bottle
  • 2 C Funfetti sprinkles

Make Your Own Layered Brownie Cake

To make this brownie cookie dough cake, you’ll need to get your three 9-inch round cake pans ready and your oven preheated. You’ll beat the oil, vanilla, sugar, and eggs together in one bowl while whisking the flour, cocoa, baking powder, and salt in another. Combine them together gradually, then add the chocolate chips. 

See how easy that was? Now they go into the round cake pans and bake. Make sure you let them cool completely before you take them out of the pan, then put them onto a wire rack.

While things cool down, you can make the Funfetti frosting in your stand mixer by beating the butter and sugar until it’s creamy and fluffy. Then add the vanilla, milk, salt, and flour. Fold the chocolate chips and sprinkles in at the end.

The chocolate frosting is made much the same, by beating the ingredients until they’re smooth, fluffy, and capable of holding a peak. Chocolate frosting

  • 1 C unsalted sweet cream butter, softened
  • 2 1⁄2 C powdered sugar
  • 1⁄2 C Hershey cocoa powder
  • 4 tbsp heavy whipping cream
  • 1 large piping bag with a large star tip

Chocolate ganache

  • 1 C semi-sweet chocolate chips
  • 1⁄2 C heavy whipping cream
  • 1 squeeze bottle
  • 2 C confetti sprinkles

Directions

  1. Preheat oven to 350 degrees and spray 3-9 round cake pans with pam baking spray.
  1. Using a large bowl, beat together until combined with the oil, vanilla, sugar, and eggs.
  1. Using another large bowl, whisk the flour, cocoa, baking powder, and salt.
  1. Gradually beat in the dry ingredients until combined.
  1. Fold in the chocolate chips.
  1. Divide the batter between the three cake pans.
  1. Bake in the oven for 25-28 minutes or until a toothpick comes out clean.
  1. Allow cooling completely before removing it and placing it onto a wire rack.

  1. Using a standing mixer, beat the butter and sugar until creamy and fluffy.
  1. Beat in the vanilla, salt, milk, and flour.
  1. Fold in the sprinkles and the chocolate chips until combined.

Chocolate frosting

  1. Using a standing mixer, beat all ingredients until combined, smooth, and fluffy, and hold a peak.
  1. Scoop the frosting into the piping bag and set it aside.

Chocolate ganache

  1. Using a small pot, bring the heavy whipping cream to a simmer.
  1. Pour the hot cream over the chocolate chips in a medium bowl.
    Whisk until smooth.
  1. Pour the ganache into the squeeze bottle.

Building the cake

  1. Place one layer of brownie onto the cake board.

  1. Using the small ice cream scooper, scoop dollops of the frosting onto a cookie sheet lined with parchment paper.
  1. Using the squeeze bottle, the pipe drips the ganache along the edge of the cake and coats the center of the ganache.
  1. Sprinkle some sprinkles around the top of the cake.
  1. Alternate between piping the frosting dollop and placing a scoop of the chocolate chip cookie dough on top.
  1. Place the cake into the fridge to harden before cutting and enjoying!
