I’m a huge fan of cinnamon rolls. Honesty, could probably eat them Every.Single.Day. So when I was thinking about fun recipes to make for a brunch, cinnamon rolls were an obvious choice. But I didn’t want to make traditional cinnamon rolls, I wanted something different, something a bit more special and whimsical, enter cinnamon roll cupcakes.

These are just as fluffy, gooey and spiced as traditional rolls but baked in a cupcake pan. Oh and the frosting, can we please talk about the frosting?

Instead of spreading the cream cheese frosting over the rolls we use a piping bag to decorate them! I mean you could use a spoon or a for to create a rustic look but there’s something fun about taking out the piping bags and decorating cupcakes! It’s one of those projects that little kids love to be a part of!

How to make cinnamon rolls in just 1 hour

If you’ve baked cinnamon rolls in the past then you probably already know they take a bit of time. Between the kneading, rolling, resting and baking it’s an afternoon long baking project.

However these rolls take less than 1 hour!! Here’s how you can make them quickly too

  1. Let the dough rest in a very warm spot of your home. I like to use the oven turned off but with the inside light turned on. It’s a cozy spot for the dough to rise quickly!

  2. Since we are baking them in a cupcake pan, the baking time goes from 40 minutes to only 20 minutes per batch.

  3. Once they are baked, move them to the refrigerator for around 15 minutes so they can cool down quickly. If you want to decorate them the cinnamon rolls should be at room temp. A quick trip to the refrigerator makes the pipping part a breeze.

How to customize cinnamon roll cupcakes

My favorite thing about this recipe is that you can totally customize it to fit what you like and the style you are going after

  • Bake it in a mini muffin pan and have mini cinnamon roll muffins!
  • Use icing instead of frosting for a lighter result
  • Swap the cinnamon sugar for Nutella to create some chocolate rolls
  • Or for melted chocolate and peanut butter to make some Reese’s inspired treats!

Cinnamon Roll Cupcakes

Ingredients:

  • ¾ Cup milk, warm
  • 3 Tsp dry yeast
  • 4 Tbsp sugar
  • 1 Egg
  • 1 Egg yolk
  • 4 Tbsp butter, melted
  • 3 Cups flour

For the filling:

  •  ¼ Cup butter, softened
  • ⅓  Cup sugar
  • 1 Tbsp cinnamon
  • Cream cheese frosting

Directions:

-In the bowl of a stand mixer fitted with the dough attachment, add the milk, dry yeast and sugar.

-Add the egg, the egg yolk, melted butter and flour and knead on medium speed for 3 minutes or until incorporated.

-Cover and let it rest for 30 minutes in a warm spot.

-Preheat the oven to 350 degrees and grease a cupcake pan. Set aside.

-Transfer the dough to a floured surface and roll into a rectangle.

Spread the softened butter on top and sprinkle with the sugar and cinnamon.

Roll the dough into a log and with the help of a knife cut out the rolls. Take to the prepared cupcake pan.

Take to the oven and bake for 20 minutes or until done.
