What makes this triple layer cookie cake the best cookie cake in the entire world?

Simple, there are layers for everyone in here:

First you have a white chocolate chip cookie layer. It’s the perfectly sweet, perfectly chewy layer we all crave in a cookie.

Then comes a double chocolate chip cookie layer that’s a chocoholic’s dream. It’s intense and totally packed with chocolate flavor.

Then we have the final cookie layer. A classic, all-American chocolate chip cookie layer that’s everything a good cookie should be; chewy, soft and crunchy all at the same time. Think of your traditional bakery style cookie.

And we top it all off with some fluffy chocolate frosting that’s sweet without being overpowering and full of chocolate flavor.

How to make a triple layer cookie cake easily?

If you are reading about all those layers and thinking that there’s no way you are going to prepare 3 different cookie doughs then don’t worry at all. Want to know why?

Because all the layers are made with the same cookie dough base.

Once you have your single, easy to make cookie dough, you just divide the batter in 3 and add all the toppings.

That means you can also customize this cake to fit what you are craving or whatever you have on hand. Add some walnuts, throw in some peanut butter chips, spice it up with cinnamon. Your cookie cake, your rules.

Ingredients:

  • 3 Cups flour
  • 1 Cup butter
  • 1 Tsp baking powder
  • ½ Cup sugar
  • 1 Cup brown sugar
  • 2 Tsp vanilla extract
  • 2 Eggs

Toppings:

  • 1 Cup chocolate chip cookies
  • 1 Cup white chocolate chunks
  • ¼ Cup cacao powder
  • ½ Cup chocolate chips

For the frosting:

  • ½ Cup butter
  • 2 Cups confectioners sugar
  • ¼ Cup cocoa powder
  • 3 Tbsp milk

Directions:

In a bowl beat butter, sugar and brown sugar until light and fluffy. Add the eggs and vanilla and mix until incorporated. Slowly mix in butter and baking powder.

Divide the batter into 3 bowls.

Add chocolate chips to one bowl and stir to combine.

Add white chocolate chunks to the second bowl and stir until incorporated.

Finally add cacao powder and chocolate chips to the third bowl and mix until incorporated.

Cover all 3 bowls with plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 350 degrees. Line a cake pan with parchment paper.
Press the white chocolate chip cookie layer firmly into the bottom of the pan.

Top with the double chocolate chip cookie dough and finish it with the chocolate chip cookie dough.
Take to the oven and bake for 25 minutes or until done.

Remove from the oven and let it cool completely.

Meanwhile prepare the frosting: In a bowl combine butter and cocoa powder. Add confectioners sugar and mix for 3 minutes. Add milk and mix until light and fluffy. Transfer to a piping bag and decorate the cookie.
