Summer is my all time favorite season. Plus, it’s ice cream season! (Well, to me, every season is ice cream season, but still…)

What are the Rainbow Popsicles Made With?

These rainbow pops are made with your favorite fruits and coconut water or sparkling water! Depending on what you want the popsicle to taste like will make these look a bit more clear, or a bit more foggy.

First we tried the flavored sparkling water. Our popsicles turned out bright and beautiful. Then we tried coconut water and it seemed to be just about the same, maybe a tad bit clearer than frosted.

How do you make the rainbow popsicle blue?

For our blue color, we added a bit of jello mix, but just a splash! Since blueberries aren’t really BLUE, we tried to make the blue more colorful and actually paired it with green grapes.

Then, we tried out coconut water which made our popsicles look a little less frosted and a bit more see-through looking, but not by much. When we did this set, we used the blueberries instead, and it made the popsicle look purple.

So if you’re going for the true rainbow and wanting a blue colored popsicle, then I’d stick with a little bit of jello mix or food coloring to get the color you want.

Tips for making your rainbow fruit popsicle:

A lot of popsicle molds will come with sticks, but if your molds do not, you can place a ziploc bag or Saran Wrap on top of the molds and pierce with a sharp knife to insert the wooden popsicle sticks in the middle. The plastic bag or plastic wrap can help keep the stick in place in the middle while it freezes overnight.

Ingredients:

-Coconut water

-Fruit
-Raspberries
-Mango
-Lemon
-Kiwi
-Blueberries
-Grapes

Options:

1. Want to add a bit of “fizz” to your popsicles? Add carbonated flavored water rather than coconut water

2. Want a pop of color? Add some colored jello into the fruit! Just a sprinkle will do!

Instructions:

The flavors are endless with these easy popsicles!

1. Add fruit into popsicles molds

2. Fill to the top with coconut water

3. Add popsicle sticks (most molds come with these). If your molds do not come with sticks, place a ziploc bag ontop of the molds and pierce with a sharp knife. Insert wooden popsicle sticks 

4. Freeze overnight

5. When you are ready to serve let the popsicles sitout for 10 minutes or run under warm water to loosen

  • Mango
  • Lemon
  • Kiwi
  • Blueberries
  • Grapes

Instructions

    1. Add fruit into popsicles molds

    2. Fill to the top with coconut water

    3. Add popsicle sticks

    4. Freeze overnight

    5. When you are ready to serve let the popsicles sit
    out for 10 minutes or run under warm water to loosen

    6. Serve and Enjoy!
