They don’t need to look perfect, the rich chocolaty glaze covers them up along with fun sprinkles. That oozing marshmallow binds it all together for the kind of cocoa you can chew over.

What You Will Need for Hot Cocoa Cookies

  • Butter – Choose the unsalted type.
  • Semi-sweet chocolate
  • Flour
  • Unsweetened cocoa powder
  • Baking powder
  • Salt
  • Brown sugar
  • Eggs
  • Large marshmallows – You’ll need 25 of them. 
  • Chocolate glaze – You’ll make this from melted unsalted butter, unsweetened cocoa powder, hot water, and vanilla.
  • Sprinkles – The best finishing touch!

Make Your Own Hot Cocoa Cookies

There are a few steps to making hot cocoa cookies but they’re all easy. To see the full recipe, make sure you scroll all the way down.

You’ll first melt that chocolate and butter. While that cools, you’ll whisk the flour, cocoa powder, baking powder, and salt in a bowl. Then you’ll use a mixer to beat the sugar, eggs, and vanilla. Do this at a low speed until it’s smoothed. 

Now, remember that chocolate and butter you melted? It should be cool by now. You’ll beat it into the mixture until it’s smooth. Now you can chill your dough, ideally for at least an hour.

Once the dough has had time for chilling, you’ll get your oven preheated and arrange your baking sheets with parchment paper. You’ll want the dough balls to be the same size for even baking. Put them on the baking sheet and lightly press each one with your fingers on the tops. 

Bake them and as you do, cut those large marshmallows in half. After the cookies bake, you’re going to press them into the cookies with the cut side down. Pop them and bake them in the oven for another couple of minutes. Then let these cool before moving them to your wire rack for full cooling.

You’ll then make your chocolate glaze by whisking the ingredients together. Drop a little of it onto each marshmallow and smear it slightly with the back of your spoon. These need about 30 minutes to set and then they will be just perfect for serving. Don’t forget the sprinkles!

  • 1/2 cup unsalted butter
  • 12 oz semi-sweet chocolate
  • 1 1/2 cups flour
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups brown sugar
  • 3 eggs
  • 25 large marshmallows

For the frosting:

  • 2 cups powdered sugar
  • 4 tablespoons unsalted butter, melted
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup hot water
  • 1/2 teaspoon vanilla extract

  1. Melt the chocolate and butter. Let it cool down.

  1. Preheat the oven to 325* F. and cover 2 baking sheets with baking paper. Make identical dough balls. Spread the balls on a baking sheet at a small distance from each other, then lightly press the dough with your fingers on top.
  1. Bake the cookies for about 12 minutes.
  1. Cut a large marshmallow in half. When the cookies are baked, take them out of the oven and press half of the marshmallows (cut side down) into the center of each cookie. Return the cookies to the oven and bake for another 2-3 minutes. Let the cookie pan cool for a few minutes, then transfer the cookies to cool.

  1. Prepare the icing for the cookies.
  1. Mix all the ingredients in a medium bowl and whisk with a whisk. Put a small amount of glaze on the top of each marshmallow and lightly smear it with the back of a spoon.
