What You Will Need for Fruity Pebble Cupcakes

For the cupcakes:

  • 1 white cake mix (choose your favorite brand)
  • 1 cup Fruity Pebbles Cereal 
  • 1-3.5-ounce box of white chocolate pudding mix
  • ¾ cup water
  • 1/3 cup vegetable oil
  • 4 large egg whites
  • Cupcake liners (you can choose whatever colors you like)

For the frosting:

  • 1 ½ cups salted butter, softened 
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy whipping cream
  • 2 tablespoons vanilla Greek yogurt 
  • 4 cups powdered sugar
  • 1/3 cup Fruity Pebbles Cereal
  • 1 large piping bag
  • 1 large round frosting tip

Make Your Own Fruity Pebble Cupcakes

To make Fruity Pebble cupcakes, you need to start by preparing your muffin tin with those cupcake liners. You’ll also want to preheat your oven.

A stand mixer works best in this recipe, but you can use a hand mixer too. You’ll fill a large bowl with the cake mix, pudding mix, water, oil, and eggs. Mix this all until it’s well incorporated, then fold the cereal into it.

You’ll pour the batter into the prepared muffin tin, making sure you keep them only 2/3 of the way full. Add more Fruity Pebbles on top and then bake. 

Let these cool completely, and while they do, get the frosting going. You’ll mix this together by creaming the butter until light and fluffy. Then add the powdered sugar a cup at a time, with vanilla and a tablespoon of yogurt and cream in between each. This should be mixed until creamy.

When the frosting is ready and the cupcakes are cool, you can put the frosting into the piping bag and get busy. Directions for Cupcakes:

Preheat oven to 350 degrees. Spray or line a standard muffin tin.

  1. In a large mixing bowl add cake mix, pudding mix, water, oil, and eggs. Mix on medium until well incorporated.

  1. Fold in ¾ cup of the Fruity Pebbles cereal.

  1. Add batter into the muffin tin until each is about 2/3 full. Sprinkle a bit of the Fruity Pebbles on top. Bake for 18-20 minutes, or until a toothpick comes out clean. Allow cooling completely before frosting.

  1. In a large mixing bowl or stand mixer, cream the butter, and beat until light and fluffy.

Instructions

For Cupcakes:

  • For Frosting:

    -In a large mixing bowl or stand mixer, cream the butter, and beat until light and fluffy. 

    -Slowly mix in the powdered sugar, 1 cup at a time, while adding in the vanilla and a tablespoon of the yogurt and cream in between each cup. Continue to mix for 1 minute or until creamy.

    - Fill your prepared piping bag with frosting. Frost your cupcakes. Top with a bit of the remaining Fruity Pebbles. Enjoy!
